PINK CHAMPAGNE AND GOJI POPSICLES

Not all cocktails need to be enjoyed in a glass. These popsicles are the perfect way to cool down on a hot summer’s day. Filled with fruit, goji berries and pink champagne, they make the perfect adult icy treat!


MAKES 8

1 tablespoon goji berries · 150g mixed berries 16 small, fresh mint leaves · 400ml pink champagne 20ml goji liqueur · 20ml Cointreau Crushed ice · Extra berries and mint leaves, to garnish


EQUIPMENT

8-mould ice lolly tray and wooden popsicle sticks / Jug


Pour a small amount of boiling water over the goji berries and leave to soak for 5 minutes, then drain. Fill the popsicle moulds with a mixture of berries, goji berries and mint leaves. Pour the pink champagne, goji liqueur and Cointreau into a jug and stir gently. Fill each mould with the mixture. Place the lids on and insert a popsicle stick into each. Place in the freezer overnight or until completely frozen. Pour a little warm water over the moulds to loosen them and serve the popsicles on a tray of crushed ice, sprinkled with mint leaves and berries.
