All too often, vegan main courses are hijacked either by replacement ‘meats’ and ‘fish’ in an attempt to reinvent/veganise classic dishes or by carb-heavy pizza and pasta that doesn’t appeal to those who are gluten sensitive or who want to lose weight.

Vegan Love satisfies both vegans and non-vegans alike. It features 14 big veg (celeriac, squash, sweet potato, beetroot, potato, onion, cauliflower, broccoli, courgette, cabbage, mushrooms, aubergine, pepper and turnip/swede).

Each recipe will include:

– One dominant veg
– One carb or protein (a pulse or grain – always gluten free)
– Toppings (herbs and crunch)

And each recipe will not only give the level of complexity (easy/medium/hard) but will also offer a time promise (15 minutes/20 minutes/30 minutes/1 hour). Many will also offer alternative suggestions (brown rice or buckwheat instead of quinoa, for example), and be accompanied by a QR code that will link to an online video.
