It helps to support local farmers and millers, and it avoids using commercial yeast where the production relies on petrochemical by-products. You nurture the starter at home, you make it slowly so the flavour is as rich as it can be, and with your hands and simple ingredients you craft a beautiful loaf of sourdough bread.

Smoothies tend to be quite thick, but you can always thin them down with a little more juice or water, if you prefer. To increase the sweetness of your smoothie – sometimes necessary if the fruit is on the sour side – you can add sugar, honey or maple syrup, but there’s also a wonderful fruit from Peru called lucuma, which is sweet like maple syrup and you can buy in powder form either online or from health food shops. It makes a very good natural sweetener and can be sprinkled onto anything. The method for all three recipes is exactly the same: blitz in the blender until smooth!
