No Cook One...

I can’t take the credit for this inspired idea as similar has been done before. However, there are numerous variations and I think the world needs to know that a boring office lunch needn’t be eaten ever again! It’s a simple concept – no-cook rice noodles, finely shredded vegetables or some shredded cooked chicken, and a delicious sachet or spoonful of super-healthy and cleansing miso soup. All you need is a kettle of boiling water and 10 minutes. My only slight tweak is that I find that if you ‘cook’ your veg in the miso soup, by the time you eat it it’s lukewarm. This is an easy problem to solve with a microwave or do as I’ve suggested in the recipe and pour some freshly made soup over the soaked, drained noodles. Feel free to swap another flavoured Asian soup or broth to pour over as the miso is not to everyone’s taste.
